PPROBLEM TO BE SOLVED: To provide a new non-reductive saccharide by taking glucose as a constituting sugar, expanding the width of the selection of the non-reductive saccharides, a new enzyme for forming the non-reductive saccharide, a method for forming them, method for producing them, a DNA encoding the enzyme, a recombinant DNA containing the same, a transformed body, a composition containing the non-reductive saccharide and use of the same. PSOLUTION: This new cyclic saccharide has a structure: cycloä6)--D-glucopyranosyl-(14)--D-glucopyranosyl-(16)--D-glucopyranosyl-(14)--D-glucopyranosyl-(1}, that is the cyclic maltosylmaltose, and the new cyclic maltosylmaltose-forming enzyme, method for forming them, method for producing them, further the DNA encoding the enzyme, the recombinant DNA containing the same, the transformed body, the composition containing the non-reducing saccharide and use of the same are also provided.
