PROBLEM TO BE SOLVED: To provide a means for continuously producing a food with a baked surface contained in a package, capable of giving an uniform baked color to the surface, without deforming the package, and suitably used in mass production, and to provide a unit for the same.;SOLUTION: This unit used in continuously baking the surface of the food contained in the package has a transporting means, a baking member, a contacting and separating means, an elastic body, and a control means, wherein the transporting means continuously transports the food contained in the package, the baking member has a heating means and is heated up to a specified temperature range, the contacting and separating means makes the baking member contact with the surface of the food contained in the package at a specified pressure and then makes the baking member separate from the surface, the elastic body intervenes between the contacting and separating means and the baking member to moderate a contact pressure between the baking member and the food contained in the package, and the control means controls the transporting means and the contacting and separating means to continuously transport the food contained in the package and bake the food.;COPYRIGHT: (C)2004,JPO
