PPROBLEM TO BE SOLVED: To provide a fermentation composition of cayenne pepper or a capsaicinoid-containing plant, capable of being safely used as a food, a pharmaceutical, etc., scarcely having pungency of a capsaicinoid, nor irritativeness thereof, and capable of potentiating vitamins, amino acids, etc. PSOLUTION: This fermentation composition contains a fermentation treatment material which is obtained by fermenting the cayenne pepper or the capsaicinoid-containing plant or an extract thereof. When the cayenne pepper is used as a raw material, a pungency-free variety is preferably used, and a pungency-free purebred variety of CH-19 Sweet is especially preferably used.
