PROBLEM TO BE SOLVED: To examine the effect of the addition of an organic solvent on the hydrolysis with a lipase in an aqueous solution in order to enlarge the use of the lipase as a catalyst.;SOLUTION: This method is a method for the hydrolysis with the lipase, in which the hydrolysis is performed in an aqueous solution by making the lipase derived from a microorganism act as a substrate, wherein one organic solvent or more selected from the group consisting of dimethylformamide, dimethyl sulfoxide, 1,4-dioxane, and dimethoxyethane is/are added to the reaction system.;COPYRIGHT: (C)2001,JPO
