PURPOSE: To simply obtain a high-quality batty acid derivative having extremely favorable hue, capable of providing an amidoamino acid having excellent hue by reacting a fatty acid with a polyamine in the presence of a specific inorganic reducing agent and a specific metal. ;CONSTITUTION: A fatty acid or its ester is reacted with a polyamine in the presence of an inorganic reducing agent (preferably NaBH4) selected from among borohydrides of the formula M1(BH4)n [M1 is an alkali(earth)metal, Al, etc.; (n) is 1-4 as a valency of M1] or a hydride of the formula M2Hn [M2 is an alkali (or alkaline earth)metal, Ti, etc.; (n) is 1-4 as a valency of M2] and a metal of the group VIII of the periodic table, its salt or its hydroxide [preferably iron, iron salt or iron (hydr)oxide] to provide the objective compound. A fatty acid or its ester of the formula R1COOR2 [R1 is a 9-17C straight- chain alkyl; R2 is H or CH3) or its ester is preferably used as the fatty acid or its ester.
