This paper describes methods and compositions for the replenishment of nutrients, especially Calcium in a food product, such as a Nutritional Bar, to minimize the hardness and extend its useful Life.The Methods and compositions of the present Invention include applying a layer of a Micronutrient, especially calcium, in a Matrix of a Core rod of a Fortified food. The Matrix is a layer of Jam or Low humidity coating, preferably a layer or Coating of chocolate or Candy that contain Calcium or other soluble Micronutrient in it.The resulting food product advantageously contains a substantial amount of micronutrients without adversely affecting its organoleptic qualities such as texture.
