A method for producing an oil body associated with a recombinant multimeric-protein-complex comprising producing in a non-human cell comprising oil bodies a first recombinant polypeptide and second recombinant polypeptide wherein the first polypeptide is capable of associating with the second polypeptide to form the multimeric-protein-complex and associating the complex with an oil through and oil-body-targeting -protein capable of associating with the oil body and the first polypeptide. Preferably the oil-body targeting protein is oleosin or caleosin, the first polypeptide thioredoxin and the second polypeptide thioredoxin-reductase. Chimeric nucleic acid constructs, recombinant fusion proteins and methods of producing recombinant multimeric protein complexes, preferably in plants, are also described. Compositions comprising the oil bodies and polypeptides can be used in food products, for treating COPD, cataracts, diabetes, envenomation, bronchiopulmonary disease, malignancies, psoriasis, reperfusion injury, wound healing, sepsis, GI bleeding, IBD, ulcers, and GERD.
