The product consists of a flan base (2) made from pie crust. flaky or sugar crust pastry and part-baked, preferably between a mould (4) and a counter-mould (6) with holes (8) to release moisture. After cooling, the part-baked flan base is frozen, and a sweet or savoury filling is added to it. In a variant the filling can be moulded and frozen before adding to the base. The frozen base and filling are packaged for sale, ready for the purchaser to complete baking, adding a sweet or savoury garnish before or after baking, as appropriate.
