The flour contains corn starch and a combination of psyllium seed husk and xanthan gum for thickening and stabilizing the dough prepared from it. A gluten-free flour for preparing dough for gluten-free bakery products contains (A) corn starch, (B) at least 5 wt.% psyllium seed husk and (C) xanthan gum (E415). Both (A) and (B) are used to thicken and stabilize the dough. The flour is soya-free.
