New thermosensitive autolytic wine yeasts saccharomyces cerevisiae and its method of production. The invention claimed in the present application consists of new Saccharomyces cerevisiae autolytic thermo-sensitive wine yeasts for the production of sparkling wines, obtained from the parental strain Saccharomyces cerevisiae CECT 1648, as well as its method of production. This procedure consists in the application of a controlled dose of UV radiation, and the selection of thermosensitive mutants under defined incubation conditions. The strain thus obtained has a phenotype with an interesting potential use in the wine industry and performs the autolysis in less time than the parental strain.
