The procedure is for the manufacture of conserve of natural Sahagun leeks and involves a washing phase of the leeks, followed by a scalding phase at 85-90 deg. C with the water acidified with citric acid during a period between one and half minutes and five minutes, depending on the caliber of the leeks used. - The jars used to pack the leeks are filled with a liquid brine and then hermetically sealed. They are then submitted to sterilization by heat treatment at a temperature of the order of 101-103 deg. C for 30 to 40 minutes.
