Enzymatic production of antioxidant compounds has preparation of hydroxytyrosol-enriched extract from olive, olive pulp and leaves and solid and liquid residues of olive oil presses. The extract is then reacted with an alkyl or alkenyl source in the presence of a lipase or esterase enzyme, with or without purification of the hydroxytyrosol ester of the resulting reaction mixture.
