The invention relates to the use of a soluble alfalfa extract obtained by pressing fresh alfalfa and containing at least 1% by weight of saponins relative to the weight of the extract, for the manufacture of a food preparation suitable for limit weight gain in mammals, in particular in the context of a lipid-lowering diet, said preparation being suitable for adding to the mammal's food ration from 0.8 g to 3 g per day and per kilogram of bodyweight mammal of said extract.
