PURPOSE: Kimchi prepared by mixing leaves of Angelicae gigantis Radix, an extract of mushrooms and kelp, and conventional raw material for kimchi is provided. The kimchi prepared is excellent in sensory properties while exhibiting high antimutagenic properties and anticancer effect. CONSTITUTION: The anticancer kimchi comprises 100 parts by weight of salted cabbage, 2.5 parts by weight of red pepper powder, 2.5 parts by weight of dried whole red pepper, 2.8 parts by weight of garlic, 0.6 parts by weight of ginger, 2.2 parts by weight of salted fish, 11.0 parts by weight of radish, 1.0 parts by weight of sugar, 2.0 parts by weight of green onion, 5.0 parts by weight of leaf mustard, 0.1 parts by weight of Zanthoxylum schinifolium, 2.8 parts by weight of pears, 5.0 parts by weight of an extract of mushrooms and kelp and 0.5 to 2 parts by weight of leaves of Angelicae gigantis Radix. The antimutagenic and anticancer effect of the kimchi has identified through an anticancer test with an Ames test, an MTT method and sarcoma 180 cells and metastasis-inhibiting tests.
