PURPOSE: A method of making loach fermented soybean paste by mixing a loach extract and fermented soybean paste is provided. The product is rich in animal or vegetable protein, has good taste and flavor and can be used as raw material for loach soup. CONSTITUTION: A loach is washed, extracted and mixed with fermented soybean paste in a weight ratio of 1:2. The fermented soybean paste is obtained using fermented soybeans, yellow grain and brine. For an example, 30kg loaches are mixed with 60kg fermented soybean paste and 1L water. The fermented soybean paste is prepared by soaking soybeans in water for 3hr, heated at 100deg.C for about 2hr and cooled to 5deg.C or less. The soybeans are mixed with yellow grain and fermented for about 7 days to give fermented soybeans, which are ground and fermented with brine solutions.
