MICROORGANISM BIFIDOBACTERIUM BREVE LMC520 CONTAINING PLASMID PBC520 HAVING IMPROVED CONJUGATED LINOLEIC ACID PRODUCING ACTIVITY, METHOD FOR PREPARATION OF CONJUGATED FATTY ACIDS AND FERMENTED MILKS CONTAINING THE SAME FATTY ACIDS USING THE SAME MICROORGANISM, AND USE OF PLASMID PBC520
PURPOSE: A microorganism Bifidobacterium breve LMC520 containing a plasmid pBC520, a method for preparation of conjugated fatty acids and fermented milks containing the same fatty acids using the same microorganism, and use of plasmid pBC520 are provided, which microorganism has improved conjugated linoleic acid(CLA) producing activity, and produces fermented milk products having high concentration of CLA within a short period together with Lactobacillus acidophilus and Streptococcus thermophilus. CONSTITUTION: The microorganism Bifidobacterium breve LMC520(KCTC 10455BP) contains a plasmid pBC520 which converts fatty acids having an unconjugated double bond structure within a chain or acylglycerol containing the same fatty acids as a substrate into fatty acids having a conjugated double bond structure or acylglycerol containing the same fatty acids, wherein the substrate has the unconjugated double bond structure in at least cis-9 and cis-12 positions; and the fatty acids having a conjugated double bond structure is conjugated linoleic acid(CLA). The method for producing the fatty acids having a conjugated double bond structure or acylglycerol containing the same fatty acids comprises transforming a microorganism having no conversion activity of fatty acids having an unconjugated double bond structure within a chain with the plasmid pBC520.
