FOOD COMPOSITION FOR PREVENTING AND TREATING HYPERLIPIDEMIA CONTAINING CYANIDIN-3-GLUCOSIDE AND BLACK RICE CONTAINING CYANIDIN-3-GLUCOSIDE AS MAIN INGREDIENT

PURPOSE: A food composition for preventing and treating hyperlipidemia containing cyanidin-3-glucoside and black rice containing cyanidin-3-glucoside as a main ingredient is provided. It has an effect of preventing and treating hyperlipidemia by reducing the content of cholesterol and neutral lipid and inhibiting fat absorption in the body. CONSTITUTION: The food composition for preventing and treating hyperlipidemia contains 2 to 20% by weight of cyanidin-3-glucoside represented by the formula 1, black rice containing cyanidin-3-glucoside and additionally vitamin C, taurine and carnitine, based on the total weight of the composition. The food is in the shape of a beverage. The cyanidin-3-glucoside can be prepared by the steps of: adding an organic acid solvent containing an acid to black rice powder obtained by grinding black rice or black rice bran obtained by polishing black rice; separating crude pigments therefrom; and subjecting to cation-exchange chromatography. The acid is acetic acid, phosphoric acid, hydrochloric acid, citric acid and malic acid, the organic solvent is methanol, ethanol etc.
