PURPOSE: A method for preparing wine(Hongju) by cellulase treatment of Lithospermum erythrorhizon is provided, thereby extracting useful components from Lithospermum erythrorhizon into wine(Hongju), and improving preparation yield of wine(Hongju) without dilution of useful components or loss of alcohol. CONSTITUTION: The method for preparing wine(Hongju) by cellulase treatment of Lithospermum erythrorhizon comprises the steps of: (a) washing and cutting Lithospermum erythrorhizon, and drying the cuttings of Lithospermum erythrorhizon; (b) adding water, citric acid and cellulase into the dried Lithospermum erythrorhizon, and concentrating the mixture under vacuum at 30 to 50 deg. C for 0.5 to 1 hour; (c) filtering the concentrate and separating Lithospermum erythrorhizon from the concentrate to prepare a first undiluted solution of Lithospermum erythrorhizon; (d) adding water into the separated Lithospermum erythrorhizon in step (c) and filtering the mixture to prepare a second undiluted solution of Lithospermum erythrorhizon; (e) mixing the first and second undiluted solution of Lithospermum erythrorhizon; and (f) adding alcohol into the mixed undiluted solution of Lithospermum erythrorhizon.
