PURPOSE: A method of making a fermented ginseng product by spraying a ginseng substrate with liquid spawn of ginseng which is obtained by culturing higher fungi in a culture medium containing a ginseng extract is provided. The product contains low molecular weight polysaccharides which are transformed from ginseng high molecular weight polysaccharides by polysaccharidase of high fungi mycelium and exhibit good physiological activity and intestinal absorption, together with various pharmacologically active components. CONSTITUTION: Fresh ginseng is dried at low temperature of 15deg.C or less to a moisture content of 60 to 70%, subjected to a tenderization process and then added with 5 to 15% by weight of a nutritive source(nitrogen source) to give a ginseng substrate, which is sterilized in an autoclave at 121deg.C for 30 to 60min, sprayed with 5 to 10%(w/v) of liquid spawn of ginseng and then cultured at 22 to 23deg.C at a humidity of 60 to 70% for 20 to 30 days. The fermented product is frozen at -80deg.C for 24 to 35hr and dried to a moisture content of 10% or less. The liquid spawn of ginseng is obtained by culturing high fungi in a culture medium containing 22 to 23g/L of a carbon source, 2.0 to 3.0g/L of a nitrogen source, 1 to 2g/L of an inorganic source and 50 to 100g/L of a ginseng extract. The high fungi are selected from Hericium erinaceus, Phellinus linteus and Ganoderma lucidum.
