To clean a baking tray with three raised edges, in a commercial cleaning station, the baking tray is placed in the cleaning position for the lateral third edge. The conical brushes are moved across the end edge, so that the lateral edge defines the cleaning width of the tray to clean the side edges and the tray surface as the tray is advanced horizontally through the tunnel of the cleaning station. To clean a baking tray with three raised edges, in a commercial cleaning station, the baking tray (9) is placed in the cleaning position for the lateral third edge (12). The conical brushes, with a conical angle of 90[deg], are set at 45[deg] to each other on a swing bracket and moved across the end edge, so that the lateral edge defines the cleaning width of the tray to clean the side edges (10,11) and the tray surface as the tray is advanced (13) horizontally through the tunnel of the cleaning station.
