In the continuous production of an edible mass, especially for confectionery, the mass (5) is formed into a strand (7) with a fixed cross section. The strand is laid on a conveyor belt (8), and cut laterally into portions and weighed, for the weight of the strand and/or the portions to be modified on a deviation between actual and nominal weights. The production assembly has a strand shaper (1), and a weighing unit (12) under the conveyor belt which is linked to a control unit (14).
