The method for the grading of a quantity of potatoes entails separating them into individual potatoes, determining a mass value for each by a weighing device (4) and determining a volume value by a volume measuring device (10). The mass and volume values are transmitted to a processing unit (13) from which a density value is obtained and from this value is derived density dependent starch content and a grading signal for the individual potato. The grading signal is transmitted to a sorting unit (11,12) which is then controlled to grade potatoes by starch content. An independent claim is included for a device for the grading of a quantity of potatoes according to starch content.
