Detection of bittern in beer or wort, on site, foams a liquid sample for the addition of a europium solution, which generates a fluorescent reaction which is visible in UV light

Detecting bittern in beer, or beer wort comprising foaming a liquid sample and adding lanthanide ions e.g. as a europium solution. The foam is illuminated by UV light and, if bittern is present with the lanthanide, then a strong fluorescent reaction is generated which can be seen visually as well as measured by instrumentation. The liquid sample is held in a foaming tube (1), half filled with liquid (3). A 20 ml disposable syringe (6) injects air through a coupling (5) to create a foam (2).
