A food oven releases hot air with evaporated water that is trapped by a condensation recovery unit (1) with a hood over an array of inclined heat exchanger plates forming a zigzag route to a condensate discharge tube. The assembly has an incoming vapour pipe (3) from the oven and ventilation slots (59, 61). The combined hood and heat exchanger are top-mounted directly on the oven. The hood incorporates numerous ventilation slits (59, 61) on the top face. The hood shape is adapted to that of the oven planform.
