The use of a soluble lucerne extract (I), obtained by pressing fresh lucerne and containing at least 1 wt. % saponins, is claimed for the production of food preparations for restricting weight gain, the daily dose of (I) being 0.8-3 (preferably 0.9-2.73, especially 2.73) g/kg.
