Preparation of fermented medium containing plant fibers, useful in preparation of foods of increased fiber content comprises lactic fermentation of aqueous medium containing soluble and insoluble plant fiber
Preparation of a liquid fermented medium (A) based on soluble and insoluble plant fibers (B). Preparation of a liquid fermented medium (A) based on soluble and insoluble plant fibers (B) comprises at least one incubation of a medium containing water and a mixture of (B) with at least one homofermentative lactic bacterium (LB), i.e. Lactobacillus plantarum; L. paraplantarumor L. pentosus. The mixture of (B) contains at least 40wt.% insoluble fibers and the total fiber content is at least 20% of the total dry matter content, by weight. The fibers have neither been prehydrolyzed or enzymatically predigested nor gelatinized. Independent claims are also included for: (1) (A) prepared by the new process; (2) preparing raw or cooked food products (C) that includes at least one step of incubating (A); and (3) (C) prepared by method (2).
