The process involves measuring forward movement of a conveyor (12). A thickness profile of transported food products is determined at constant interval according to the forward movement of the conveyor. An estimation of a quantity of the transported food product is made based on the thickness profile and information relative to nature of the transported food products. An independent claim is also included for an equipment for processing food products.
