Preparation of an ester of fatty acid and glycerin (I) with a high degree of purity comprises reaction of a vegetable or animal oil with 1-18C aliphatic monoalcohol (a) in the presence of a catalyst (b) (combination of: titanium oxide and zinc oxide; zinc oxide, titanium oxide and alumina; titanium oxide and bismuth oxide; or bismuth oxide, titanium oxide and alumna).
