PPROBLEM TO BE SOLVED: To provide a method for producing organic acid such as succinic acid required for producing biodegradable plastics, from agriculture and forestry-based waste such as rice straw and waste wood, and to provide devices thereof. PSOLUTION: (1) Succinic acid is produced by using a saccharification medium obtained from agriculture and forestry waste such as rice straw, chaff, wheat bran and waste woods as a growth substrate for succinic fermentation microorganism. (2) A method for obtaining "the microorganism culture capable of causing succinic fermentation of biological wastes" comprises inoculating/culturing a sample suspension of a fermented food, soil, manure or the like on an agar medium using neutralization product in biological waste saccharified products as the exclusive nutrient and mixed with a pH indicator such as BCP, and separating an organic acid producing culture by using the medium color change which suggests medium pH decrease as the index. (3) The method for producing fertilizer, compost, soil conditioner and the like uses the residue or the fermented liquor generated after organic acid fermentation. And (4) therefor, the organic acid production method for several kinds of organic acids such as lactic acid, citric acid, malic acid, acetic acid, formic acid and propionic acid is provided.
