PPROBLEM TO BE SOLVED: To provide a method and an apparatus capable of adjusting the amount of solutes contained in accordance with applications and performing efficient desalination and concentration at an atmospheric pressure when utilizing desalinated deep sea water and concentrated deep sea water for various kinds of articles. PSOLUTION: Sea water sampled from deep sea is injected into an evacuated chamber of an evacuated tank having a steam chamber on the surrounding of the evacuated chamber across a heat conducting wall therebetween, steam of atmospheric pressure superheated to a boiling temperature or higher by high-frequency heating is supplied to the steam chamber, water in the sea water is evaporated by heating sea water in the evacuated chamber and fresh water is obtained by condensing the evaporated water. On the other hand, the concentrated deep sea water remaining in the evacuated chamber is taken out. As necessary, water in the concentrated deep sea water is further evaporated to obtain salt. The water in the deep sea water can be separated in a short period of time. When the degree of evacuation in the evacuated chamber is enhanced, incorporation of solutes into distilled water increases, and when the degree of evacuation is lowered, the incorporation of solutes into distilled water is reduced.
