The herein disclosed cultivation method of edible mushrooms of the genus of P. eryngii var. eryngii, P. eryngii var. eleaoselini, P. eryngii var. ferulae, P. eryngii var. thapsiae and P. nebrodensis is based on combinational chemical inflows (as provided by the EE Regulation 2092/91 on the organic agriculture) and on friendly environmental techniques conducing to the production of standardized produce. There are utilized allowed agricultural residues and straw of cereals firstly subjected to the proper treatment (cutting, mixture, regulation of the composition and characteristics, pre-wetting) to improve their properties, in the sequel pasteurized at the indicated time-and-temperature combination and finally placed into special cultivationchambers where the environmental parameters are accurately regulated and cultivation techniques implemented in order to produce mushrooms. The advantage of the invention is that it produces a top-quality standardized organic produce with particularly satisfactory performances relative to the established methods applied to conventional cultivations.
