The invention relates to water-in-oil emulsions comprising: (a) a maximum viscosity of 5,000 mPa.s; (b) a content of water and water-soluble substances of, in total, at least 75 wt.% and a content of lipids, emulsifiers and lipophilic constituents of, in total, a maximum of 15 % with regard to the total weight of the preparations; (c) an oil phase of at least 75 wt.% comprising one or more substances selected from the group of non-polar lipids which are liquid at room temperature and which comprise a polarity greater than 30 mN/m, and/or selected from the group of silicone oil of any polarity, whereby this weight percentage is given with regard to the total weight of the oil phase, and; (d) at least one interfacially active substance selected from the group of substances of general formula (I).
