A method for the production of pectin from citrus fruits comprising a process step for the production of a raw material (10) containing citras fruit components, a process step for conducting at least one acid hydrolysis (15, 20, 55, 60) and at least one pectin extraction step (25, 30, 35, 65, 70, 75). The acid hydrolysis step (15, 20, 55, 60) is conducted in the own citrus juice. Bio-certifiable pectin is obtained in one implementation of this method when biologically certified citrus fruits and biologically certified ethyl alcohol as precipitating means are utilised.
