In apparatus for measuring and regulating the viscosity of liquids (A), having a device (3) for determining the viscosity (and/or correlated parameter(s)) of a portion (5) of (A) and a regulator (4) for the temperature of the portion, the difference between the measured viscosity (and/or correlated parameter(s)) of the portion and a reference value is determined, the temperature of the portion is controlled utilizing the determined difference and the temperature regulator (4) includes a device for producing an electromagnetic field. An independent claim is included for a corresponding viscosity measuring and regulating process.
