The espresso or coffee pad machine has continuous heater (22) which heats water fed by a pump from a tank (20) and, after heating, into a brewing chamber (24) whose outlet is fitted with a temperature sensor. This is connected to a control unit which switches off the pump and/or heater when the temperature exceeds a threshold value. An independent claim is included for a method for controlling an espresso or coffee pad machine.
