Production of sugar microspheres (I), having particle size less than 500 Microm, involves (a) finely spraying a sugar syrup onto a solid support formed from sugar(s) and (b) drying, stages (a) and (b) being alternated until (I) are obtained. An independent claim is included for microspheres (I) obtained by the process, having a sphericity index of 0.85-1 (and preferably a convexity index of 0.9-1 and a particle size of 100-500 Microm).
