The oven floor consists of a preferably endless belt made from a woven, braided or knitted mesh of wires and/or cables of stainless steel or similar, passing round drive and tensioning rollers. The mesh weave includes at least one lengthwise cable to give it a resistance to traction, and has an open structure that makes it permeable to the passage of convected hot air.
