The invention relates to a manufacturing method for obtaining a hazelnut spread substitute, without added fat and / or without added sugar falling within the scope of dietary products. use of the soluble fiber of chicory known as inulin, mixed with water in precise proportions which allows to obtain a texture and taste equivalent to the traditional spread, without the Use of vegetable oil and sugars.
