PROBLEM TO BE SOLVED: To provide a method for producing fermented milk powder which is suitable for drying and pulverization fermented milk containing lactic acid bacteria weak to heat as probiotix at an optimal growth temperature of nearly 37-38°C while keeping the lactic acid bacteria live.;SOLUTION: This method for producing the fermented milk powder comprises vacuum spray drying for producing the fermented milk powder containing live lactic acid bacteria through vacuum spray-drying fermented milk. The vacuum spray drying is such that far infrared radiation is used as a heat source for drying when vacuum spray-drying the fermented milk, the number of live lactic acid bacteria in the fermented milk powder is 70%-80% of the number of lactic acid bacteria in the fermented milk before performing vacuum spray drying treatment, and drying temperature when vacuum spray-drying the fermented milk is ≤50°C, preferably 35°C-38°C.;COPYRIGHT: (C)2007,JPO&INPIT
