PROBLEM TO BE SOLVED: To easily obtain a diglyceride-contg. fat-and-oil composition of high purity in a short time by transesterification between a monoglyceride and fat- and-oil.;SOLUTION: This diglyceride-contg. fat-and-oil composition is obtained by transesterification between a monoglyceride and fat-and-oil; after ending the reaction, the fatty acid and monoglyceride left in the final product are removed by such a means as steaming at reduced pressures, molecular distillation or chromatography; depending on use, the monoglyceride may be left intact in the final product; and the monoglyceride thus removed can also be reused as a raw material. In view of the fact that, for example, as the monoglyceride content of a starting material rises (e.g. 5 wt.%), the diglyceride content of the reaction product (i.e., yield) also rises to as high as 15 wt.%, however if the above monoglyceride content is too high, the quantity of the monoglyceride left after the reaction also rises, thus the monoglyceride content of the starting material is pref. ≤50 wt.%, more pref. 5-40 wt.%.;COPYRIGHT: (C)2000,JPO
