PURPOSE: To efficiently obtain a partially deacylated derivative of a sucrose ester useful as an artificial sweetener or the like in high yield by treating a specific sucrose ester with a specific hydrolytic enzyme or the like in an anhydrous reaction solvent and regioselectievly deacylating the sucrose ester. ;CONSTITUTION: A sucrose ester selected from the group consisting of sucrose octaacylate, sucrose heptaacylate and surcose hexaacylate and having ≥6 ester groups is treated in an anhydrous reaction solvent containing an organic solvent such as THF with an hydrolytic enzyme capable of catalyzing the deacylation of the sucrose ester such as lipases or a combination of the hydrolytic enzymes to produce a partially deacylated sucrose derivative having more free hydroxyl groups than those of the starting sucrose ester by one or more in one or plural pre-selected positions.
