This disclosed invention refers to the method of making the medium for cultivation of edible fungi, and also the method for cultivation of fungi utilizing the said medium. This method is characterized by adjusting pH to 5~7 by adding alkali during the water content control phase. This invention provides the benefit that food waste will be properly treated so that it will not damage the environment, and that the fungi farmer will benefit from additional income.
