PROBLEM TO BE SOLVED: To obtain a new derivative, comprising a specific aspartyl dipeptide amide derivative, producible from a readily available raw material, having high stability and excellent in safety and sweetness and useful as an active ingredient, etc., of a low-caloric sweetener. ;SOLUTION: This new aspartyl dipeptide amide derivative (salt) is represented by the formula [R₁ is H or a 1-13C hydrocarbon; R₂ and R₃ are each a 1-3C alkyl and a 3-6C cycloalkyl including C¹ and R₂ and R₃; R₃ is a 2-7C alkylthioalkyl, an alkylsulfonylalkyl, etc., when R₂ is H; R₄ is a (substituted) phenyl, benzyl, cyclohexyl, pyridyl, etc.; the structure of aspartic acid containing carbon at the C¹ position is (S) ; the structure including carbon at C²-position is (R), (S) or (RS); X is D-Ala, D-Val, D-Leu, D-Ser, etc.[ ]e.g. α-Laspartyl-D- isoleucine (R)-α-methylthiomethylbenzylamide] and is useful as a low-caloric sweetener, etc., having high stability and excellent in safety and sweetness.;COPYRIGHT: (C)1998,JPO
