PROBLEM TO BE SOLVED: To produce Sake or other food and beverages with rich mellow flavor through isolating yeast presenting good characters for brewing Sake or the like from cherry blossoms. SOLUTION: The Sake or other food and beverages with rich fruity flavor better in balance than conventional products is produced by using a yeast strain belonging to the genus Saccharomyces cerevisiae isolated from cherry blossoms after isolating and selecting the strain. The Sake thus produced has a harmony between sweetness and acidity with delicate flavor, being high in commodity value as a unique Sake.
