A process for the preparation of aqueous-alcoholic extract of bread cereals grains for production of alcoholic beverages comprises washing the original grain by water with separation of aqueous phase and admixtures, placing washed grain into water with subsequent infusion of sprouted grains in aqueous-alcoholic liquid with following merging and filtration of obtained aqueous-alcoholic infusion. Washed grains of breadstuff are placed into water. Thereafter, the water is merged and grains are covered with humid tissue.
