The invention concerns a method for determining at least one dynamic characteristic of a sample of a deformable fluid or solid material, comprising contacting said sample (24, 42) with at least one interactive surface (23, 25, 41a, 41b); implementing a relative movement between said sample (24, 42) and said interactive surface (23, 25, 41a, 41b); and measuring (26) at least one dynamic of kinematic quantity for the sample (24, 42) and/or said interactive surface (23, 25, 41a, 41b). The invention is characterized in that said interactive surface (23, 25, 41a, 41b); has an intrinsic wettability with respect to the material higher than that of the metals. The invention also concerns a device for implementing said method. In accordance with particular embodiments, said interactive surface (23, 25, 41a, 41b) is made of high-density sintered ceramics or of single-crystal silicon or germanium, preferably having a zero open porosity and an arithmetic roughness parameter less than 12.5 µm, preferably between 0.4 and 1.6 µm.
