The cooking of lauter wort in a wort pan for brewing beer, comprises directly supplying the lauter wort in a wort pan (3) by a lauter tun (1), heating the lauter wort taken from the pan by a lauter wort boiler (6b) at 93[deg]C and subsequently supplying the heated wort into the wort pan. The energy taken over a condensation arrangement (17) from cooking vapor is used for heating the lauter wort and is stored as hot water storage. Independent claims are included for: (1) procedure for brewing of beer; (2) plant for brewing of beer or for cooking of lauter wort; and (3) procedure for converting a plant for brewing of beer or cooking of lauter wort.
