The device for introducing cuts into dough (12) or other food, comprises a cutting device (18) exhibiting a cutter head (22) with static cutting knives and intended above a conveyor belt (21) for the dough, and a sensor mechanism (31), which is arranged before the cutting device in dough conveying direction and which detects the shape of the dough on the conveyor belt. One of the cutting knives is motor operatable or displaceable in X-, Y- and Z-direction. The cutting device is controllable with the detected data, which is evaluated via a computing mechanism (32). The device for introducing cuts into dough (12) or other food, comprises a cutting device (18) exhibiting a cutter head (22) with static cutting knives and intended above a conveyor belt (21) for the dough, and a sensor mechanism (31), which is arranged before the cutting device in dough conveying direction and which detects the shape of the dough on the conveyor belt. One of the cutting knives is motor operatable or displaceable in X-, Y- and Z-direction. The cutting device is controllable with the detected data, which is evaluated via a computing mechanism (32). Before introducing a first cut into the dough, a cutting point of the cutting knife is positioned in congruent manner to the surface center of the dough. The cutter head exhibits Y-axis, along which a cutting edge-holding mechanism is arranged in displaceable manner. The cutting edge holding mechanism revolves around an axis of rotation aligned in Z-direction. Each cutting edge-holding mechanism is separately actuated in rotatable manner around a Z-axis. The cutting speed and the displacement path of the cutting knife are adjustable along the cutting knife axis in dependence of the length- and/or contour of the dough. Before introducing the cut into the dough, the cutting knife is positioned into an end position on the cutting knife axle. The cutting edge-holding mechanism receives one of the cutting knives, which is displaceably arranged along a cutting knife axis aligned parallel to the dough conveyance level. Each cutting knife is separately actuated along a cutting knife axis of the cutting knife-holding mechanism. The axes of rotation of cutting knife-holding mechanism lie in a common axis, which is parallel to the X- direction running at the cutting head.
