Process for the preparation of chitin nanoparticles in which beta-linked (1-4) -linked glucosamine and N-acetyl-D-glucosamine copolymer chains have an average degree of acetylation DA greater than or equal to 50% and a weight average degree of polymerization DPw greater than or equal to 1500, are dispersed at a concentration C at least equal to the concentration C * of entanglement of the copolymer chains, in an aqueous solution whose pH is between 1 and 8, said solution being obtained by mixing in an aqueous solution of an acid and a salt.
