The process of separating cooked flesh pieces of marine/terrestrial animals containing bone and/or cartilage, comprises a physical treatment of spraying a fluid under pressure (6-50 bars) on the pieces of cooked flesh to separate the flesh from bone/cartilage, optimizing the physical treatment, arranging the cooked flesh pieces on a surface of an opening support (3), and passing a flow of fluid to the surface of the support following a direction orthogonal to the support, so that the flow of fluid provokes a detachment of flesh from bones/cartilage. The process of separating cooked flesh pieces of marine/terrestrial animals containing bone and/or cartilage, comprises a physical treatment of spraying a fluid under pressure (6-50 bars) on the pieces of cooked flesh to separate the flesh from bone/cartilage, optimizing the physical treatment, arranging the cooked flesh pieces on a surface of an opening support (3), and passing- a flow of fluid to the surface of the support following a direction orthogonal to the support, so that the flow of fluid provokes a detachment of flesh from bones/cartilage and the flesh through the opening of the support. A temperature of the fluid for a hot treatment is 60-80[deg]C and for a cold treatment is 0-20[deg]C. The fluid comprises gases such as air, or liquid such as water, aqueous liquid, vegetable oil and/or animal fat.
